Ma's Quick Banana Bread

3 ripe bananas
2 eggs
1/2 c. oil
1 1/4 c. flour
1 c. sugar
1/2 tsp. salt
1 tsp. baking soda

Mash bananas in a large bowl.  Stir in eggs and oil; mix well.  Sift together dry ingredients and add to banana mixture.  Stir only until blended (should be slightly lumpy).  Pour into a greased and floured loaf pan.  Bake at 325 degrees for 75 minutes.

Recipe doubles well.

Naked Chicken Burritos

Canned or cooked black beans
Cooked rice
Salsa of your choice
Cooked chicken chunks
Shredded cheese

Layer bowls with ingredients as listed.  Pop in the microwave for 3 - 5 minutes (depending on microwave strength).  Top with sour cream, if desired.  Serve and accept adulation from your adoring fans.

Quick Chili

2 cans diced tomatoes
1 can black beans
1 can kidney beans
1 can northern white beans
1 tsp. pepper
2 Tbsps chili powder

Heat in a sauce pan.  Enjoy!  I also sometimes throw in leftover cooked ground beef, turkey or sausage.  This is a wonderful, quick and delicious comfort winter food.

  1. That sounds good; you could also warm tortillas to serve on the side; hungry eaters could pile their serving into a tortilla.
